BANANA BREAD 
3/4 c. butter, softened
1 1/2 c. sugar
1 1/2 c. mashed bananas (4-6 bananas)
1 tsp. vanilla
2 eggs, beaten
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1/2 c. buttermilk or sour milk
1/2 c. chopped nuts (optional)

Heat oven to 350 degrees. Grease 9 x 5 inch loaf pan. Cream butter and sugar; stir in bananas, vanilla and eggs. Combine flour, baking soda and salt; stir in alternating with buttermilk just until flour is moistened. Fold in nuts.

Pour batter into greased pan. Bake at 350 degrees for 1-1 1/2 hours or until wooden prick inserted in center comes out clean; cool slightly. Loosen sides from pan; remove and cool completely. 1 loaf.

To sour milk, use 2 teaspoons vinegar plus enough milk to make 1/2 cup.
