IMPOSSIBLE HAM N SWISS PIE 
2 c. cut up fully cooked smoked ham
1 c. shredded natural Swiss cheese
1 med. peeled tomato diced
1/2 c. chopped green onion
1/2 c. green pepper chopped
4 eggs
2 c. milk
1 c. buttermilk baking mix
1/4 tsp. salt (if desired)
1/8 tsp. pepper
2 tbsp. chopped mixed herbs (optional)

Heat oven to 400 degrees, grease a 10 x 1 1/2 inch pie plate. Sprinkle ham, cheese, tomato, onion and pepper in plate. Beat remaining ingredients until smooth (15 seconds in blender on high or 1 minute with hand mixer). Pour into plate, bake until golden brown and knife inserted in center comes out clean, 35 to 45 minutes. Cool 5 minutes. Makes 6 servings.
