MEXICAN CASSEROLE 
1 lb. ground beef
1 pkg. taco mix
2 cans stewed tomatoes
1 can corn
1 pkg. cornbread mix
1 sm. can mushrooms
1 pkg. Mozzarella cheese (use as desired)

Brown meat and drain, stir in dry taco mix. Add mushrooms, tomatoes and corn. Bring to a soft boil. Pour into casserole dish. Top with cheese. Mix cornbread mix, pour on top of dish and bake at 400 degrees. Use time on cornbread package. Then serve.
