CHET'S STUFFED FLOUNDER 
1 c. chopped onion
1 c. chopped bell pepper
1 c. chopped celery
1/2 c. sour cream
1/4 c. butter
8 oz. pkg. herbal bread crumbs
6 oz. can small or broken shrimp
6 oz. can crab meat
1 flounder (approximately 2 lbs. live weight)
1 lemon

Fillet, wash and set aside the flounder. In a large bowl mix onion, bell pepper, celery, bread crumbs, shrimp and crab meat. In a shallow pan lay the bottom fillet (white side) skin side down. Form the stuffing mixture on the fillet followed by top fillet (dark side). Slice the lemon in 3/16 inch slices and place on top of the flounder. Chop butter on top of the flounder. Cover and bake at 375 degrees for 45 minutes. Remove cover and cook an additional 15 minutes.
