JELLO SALAD 
1 cucumber
1 1/2 tsp. onion powder
1 c. cold water
1 tbsp. vinegar
Dash of cayenne pepper
2 (3 oz.) pkgs. lime Jello
2 c. boiling water
1/2 tsp. salt
Lettuce leaves

DRESSING:

1 (3 oz.) pkg. cream cheese
1/2 sm. onion
1/2 tsp. dry mustard
1 tsp. salt & pepper
1/4 c. oil
1/2 tbsp. tarragon vinegar
Paprika

Peel cucumber, cut in half lengthwise and seed it. Grate cucumber. Dissolve Jello in boiling water and add onion powder, cold water, grated cucumber, vinegar, salt and cayenne pepper. Pour mixture in a ring mold and refrigerate until firm.

DRESSING: Cream the cream cheese. Chop the onion, finely. Beat the onion, mustard, salt and pepper into cream cheese. Add the oil slowly while beating. Then add the vinegar and paprika. Makes 1/2 cup.
