ZUCCHINI CORN BAKE 
1 lb. zucchini
1/2 c. chopped onion
1/3 c. green pepper
2 tbsp. butter
1 can (1 lb.) cream style corn
3 eggs, beaten
3/4 tsp. salt
1/4 tsp. pepper
1/3 c. sharp Cheddar cheese

Slice zucchini and cook 8 to 10 minutes in salted water. Drain. Cook onion, green pepper and butter for 10 minutes. Combine with beaten eggs. Season with salt and pepper.

Bake in 1 1/2 quart casserole. Sprinkle with cheese. Bake at 350 degrees for 50 minutes.
