MACARONI & PEAS | |
1 onion, chopped 6 tbsp. olive oil 1 (6 oz.) can tomato paste 2 qts. hot water, divided 1/2 tsp. sugar 1/2 tsp. dried basil 1 lb. macaroni 1 (16 oz.) can peas, with liquid Salt & pepper to taste Saute onion in oil. Add tomato paste. Stir briskly for three minutes. Add one quart of hot water, sugar, basil, salt and pepper. Let mixture come to a boil; then simmer for 15 minutes. Add one quart of hot water. Bring back to a boil and add macaroni. Cook to al dente stage. Add peas to mixture and continue to cook for 2 minutes. Remove from heat and serve. |
