MARK'S SPECIALTY 
Fresh linguine (enough for 4 people)
1/2 c. virgin olive oil
4 cloves garlic, crushed
1 c. carrots, julienne
1 c. zucchini, julienne
1 c. yellow squash, julienne
1 lb. peeled, uncooked shrimp
Lots of oregano (or to taste)
Black pepper (to taste)

1. Saute garlic until tender (not brown) in olive oil.

2. Saute carrots for 2 minutes, then add zucchini and yellow squash and saute all vegetables until tender (add oregano and black pepper while veggies are cooking).

3. Add shrimp to vegetables and oil.

4. Once shrimp is cooked, add to freshly cooked linguine and toss.

5. Serve hot.

This is a terrific main course or side dish. If served as side dish, shrimp not necessary.
