PAPAYA BREAD 
1 c. shredded firm papaya, drain well on paper towel and set aside
1/2 c. butter
2/3 c. sugar
2 eggs
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg

Cream butter and sugar; add eggs and mix. Combine flour and spices and mix into the creamed mixture. Stir in the papaya and 1/2 cup raisin (1/4 cup chopped walnuts optional). Pour into greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pan. Bake at 350 for 1 hour and 10 minutes. Cool 10 minutes and remove from pan. Yields 1 loaf.

Along with bananas, papaya is the most commonly eaten fruit on Java.
