CHICKEN PECAN SALAD 
3 c. cubed cooked chicken
1 c. diced celery
1/2 c. mayonnaise
2 tbsp. salad oil
1 tbsp. vinegar
1/2 tsp. salt
1/4 c. coarsely broken pecans, toasted
1 1/2 c. sliced fresh peaches (about 3)

Mix together mayonnaise, oil, vinegar and salt. Pour over all other ingredients. Chill, just before serving stir in pecans. Serve with sliced peaches on the side.
