LENTILS AND ESCAROLE SOUP 
1 head escarole
1/2 lb. dry lentils
1 lg. onion, sliced
1 tsp. salt
1/2 tsp. black pepper

Clean and soak lentils in water. While they soak clean escarole, leaves could be dirty.

Fill soup pot 3/4 full of water. Put in escarole and part cook for about 10 minutes. Add lentils to the water and then season with salt and pepper. At this time, add the onion which is sliced. Let all of this cook until the lentils are soft.
