POTATO BREAD 
1 med. potato, peeled and diced
3 c. potato water, medium hot
3/4 cube butter
1 1/2 tbsp. honey (1/3 c. + 1 tbsp.)
1 tsp. salt (2 tbsp. salt)
About 10 1/2 c. unbleached white flour (or around 12 c. 1/2 wheat)
2 tbsp. yeast in 1 c. warm water

Boil potato in enough water so you'll have 3 cups potato water to use. Place potato water in Bosch mixer, honey, salt, butter. Proof yeast in 1 cup water for 10 minutes. Add to other ingredients in bosch. Put 3 cups flour in and start Bosch. Add the other 5 cups flour, one at a time. When it's all in and mixed together, knead for 10 minutes.

Dough should not be so sticky that it sticks to fingers. If it is, knead by hand the other 1/2 cup flour in. Place in greased pan and let rise to double, about 1/2 hour or 45 minutes. Punch down and divide into loaves and put into greased pans. Cover with cloth and let rise until reaches top of pan. Bake at 350 degrees for 30 minutes.
