CHOCOLATE CHEESECAKE BARS | |
1 pkg. (12 oz.) semi-sweet or chocolate chips 1/3 c. butter 2 c. graham cracker crumbs 1 c. chopped walnuts or pecans FILLING: 3/4 c. sugar 1/3 c. boiling water 1/4 c. butter 1 c. nonfat dry milk 1 pkg. (8 oz.) cream cheese 1 egg 1 tsp. vanilla extract Combine chocolate chips and butter in microwave safe bowl. Microwave on medium high (70%) power for 3 minutes. Stir every minute. Add crumbs and nuts. Grease a 9x13 inch baking pan. Press half the mixture into the pan. In saucepan, combine sugar and water. Bring to a boil. Stir until sugar is dissolved. Add butter. Place dry milk into small mixer bowl. Beat in the sugar-butter mixture. Beat 1 minute until smooth. Beat in the cream cheese, egg and vanilla until mixture is smooth and creamy. Pour into crumb-lined pan. Top with remaining crumb mixture. Bake 350 degrees for 25-30 minutes or until toothpick inserted near the center comes out clean. Cool to room temperature. Chill before cutting into bars. |
