BEET SALAD 
1 1/4 tbsp. Knox gelatin dissolved in
1/4 c. cold water
1 c. boiling water or beet juice
1/3 c. sugar
1/3 c. vinegar
2 tbsp. horseradish
1/2 tsp. salt
2 c. shoestring beets

Dissolve gelatin in cold water, add boiling water or beet juice, add sugar and vinegar and salt. Let stand until nearly firm. Then add horseradish and shoestring beets. Can add celery, olives, etc. This is very good with roast beef.
