PECAN CHEESE CRACKERS 
1 lb. sharp cheddar cheese, grated
2 sticks butter
3 c. sifted flour
Several dashes cayenne pepper
1 c. chopped pecans

Combine cheese and butter, cream thoroughly, add cayenne pepper to taste. Add flour and pecans and mix thoroughly. Dough will be very stiff. Shape into rolls and refrigerate overnight. Slice 1/4" thick and bake in 350 degree oven for 12 to 15 minutes. Do not brown. Can be frozen before or after baking and used as desired.
