CHEESE CRACKERS 
3/4 c. all-purpose flour
1/2 tsp. salt
Dash cayenne pepper
1/2 c. butter, softened
2 c. (8 oz.) shredded sharp cheddar cheese
1 c. wheat Nutri-Grain cereal (corn is alright), crushed to 1/3 c.
1 1/2 c. Nutri-Grain cereal, crushed to fine crumbs

Stir together flour, salt and pepper. Set aside. In large mixing bowl, beat butter and cheese until very light and fluffy. Stir in the 1/3 cup crushed cereal. Add flour mixture; combine well. Portion dough using rounded measuring teaspoon. Roll into balls and coat with fine cereal crumbs. Place on ungreased baking sheets. Flatten with fork dipped in flour. Bake at 350 degrees (some ovens 325 degrees) for about 10 minutes. Be careful the first time, as they burn easily on under side.
