CHEESECAKE 
12 graham crackers
1/2 c. butter (1 stick)
1/4 c. confectioners sugar
4 (8 oz. each) pkg. cream cheese, cut in 1 inch cubes
5 lg. eggs
1 1/3 c. sugar
1 tbsp. vanilla
Optional toppings: fresh fruit or pie fillings or spread sour cream on top after baking and bake 5-10 minutes more

Crumble graham crackers in food processor with metal blade. Pulse on and off until fine crumbs. Add butter, confectioners sugar, pulse on and off until mixed. Press crumb mixture firmly against bottom of 9 inch spring form pan. Set aside.

Reinsert metal blade and add 2 packages cream cheese and 2 eggs to bowl. Pulse on and off until creamed. Repeat, adding 2 more packages cream cheese and 2 eggs. Add remaining egg, sugar, and vanilla. Process until mixed.

Pour into prepared pan and bake at 350 degrees for 55-60 minutes. Let cool on wire rack, cover with plastic; refrigerate. Best made 1 day ahead.
