LEFTOVER POTATOES 
2 c. leftover mashed potatoes
8 oz. sour cream
1/2 lb. med. cheddar cheese, grated

Do not use freshly mashed potatoes; they will be too runny.

Mix leftover mashed potatoes and sour cream well. Spray small casserole dish with Pam or grease with butter. Layer potatoes and cheese, using at least 2 layers of each with cheese as top layer.

Bake at 350 degrees for 30 minutes or until lightly browned. Slice and serve.
