CASS' STRAWBERRY MOUSSE 
8 c. strawberries
3/4 c. sugar
1/2 c. Marsala wine
Juice of 1 lemon
3 env. unflavored gelatin
1/2 c. hot water
1 1/2 c. whipping cream
Additional strawberries
Whipped cream

Wash and hull 8 cups strawberries. In a blender puree strawberries and sugar. Place mixture in large bowl and stir in Marsala and lemon juice. Stir gelatin into hot water until dissolved. Stir into strawberry mixture. Whip 1 1/2 cups cream to medium thick. Fold into strawberry mixture. Pour mousse into large glass bowl or spoon into individual glasses.

Refrigerate overnight. Before serving, decorate with additional berries and whipped cream. Serve chilled. Makes 10 servings.
