DIET LASAGNA | |
1 lb. ground beef 1 1/4 c. chopped onions 12 oz. cottage cheese 1/4 c. Parmesan cheese 4 oz. mushrooms 12 oz. tomato sauce 1/2 tsp. Italian Seasoning 1 egg (beaten) 10 oz. pkg. chopped spinach 1 pkg. Mozzarella cheese Salt and pepper to taste Saute onions and beef, drain, add tomato sauce, Italian seasonings, mushrooms, salt and pepper. Heat to boil. Reduce heat and simmer for 10 minutes. Mix cottage cheese, egg and Parmesan cheese. Squeeze liquid from thawed spinach. In 9 inch pan, greased, layer spinach, cottage cheese, meat mixture, and Mozzarella cheese. Repeat and top with little Parmesan. Bake at 350 degrees for 45 minutes or less. Let stand for 20 minutes before serving. |
