GRITS CASSEROLE 
1 c. grits
3 tbsp. butter
1 c. cheese, strong or mild, shredded
2 eggs
1 c. milk
Tabasco sauce

NOTE: It takes about 4 cups of water for grits.

Cook grits in boiling water for 15 minutes. Remove from heat; add butter and mix well. Put in casserole dish. Beat eggs one at a time. Add cheese and milk; mix well. Place on top of grits. Place a small amount of Tabasco sauce on top and place in oven. Bake 45 minutes at 375 degrees.
