PORK BIRDS 
1/4 tsp. oregano
Salt & pepper to taste
12 thin slices Mozzarella
1/2 c. sauterne wine
2 tbsp. grated onion
1 garlic clove, crushed
Ground pepper
1/4 tsp. thyme
3 lbs. lean pork, cut into 12 thin slices
2 tbsp. olive oil
14 oz. can tomatoes
2 tbsp. celery leaves, finely chopped
1 bay leaf

Preheat oven to 350 degrees. Combine oregano, thyme, salt and pepper. Season one side of each pork slice. Top with a slice of Mozzarella, roll and fasten with a toothpick. In a large skillet brown meat on all sides in olive oil. Remove to a baking dish, pour wine over meat and add remaining ingredients. Cover and bake 45 minutes. Remove pork to a hot platter, strain sauce and thicken with a little cornstarch. Pour sauce over birds.
