BLACK BEAN SOUP 
2 (16 oz.) cans black beans
1/2 c. smoked pork or salt pork, diced
2 tbsp. olive oil
1/2 green pepper, diced
1/2 Spanish onion, diced
1/2 clove garlic, minced
1 ham hock
1 bay leaf
1/2 tsp. Goya Ham Concentrate (sabor a jamon)
Pinch of black pepper
2 tbsp. Red Wine Vinegar

In large pot, brown salt pork in olive oil. Add green pepper, onion, garlic. Saute' until onions are translucent and green peppers are tender. Add ham hock, bay leaf, ham concentrate, black pepper, vinegar, and beans, including liquid. Simmer 30 to 40 minutes. Top with chopped onion, white rice, or both. Serves 3 or 4.
