NEAPOLITAN COOKIES 
2 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 c. butter
1 1/2 c. sugar
1 egg
1 tsp. vanilla
1/2 tsp. almond extract
5 drops red food coloring
1/2 c. finely chopped walnuts
1 (1 oz.) square unsweetened chocolate

Mix dry ingredients, then the rest of the ingredients for 3 minutes at medium speed. Divide dough in 3 parts.

Line a 9x5 inch pan with wax paper. To one section, add almond and red food coloring. To middle layer, add chopped nuts. Place the red layer into bottom of pan and press evenly in place. Place the middle layer over first layer. Then add melted chocolate to third part. Pat on top of second layer.

Cover and chill at least 4 hours. Lift wax paper to remove chilled dough from pan. Cut the dough in half lengthwise; then slice each half crosswise into 1/8 to 1/4 inch slices. Arrange slices an inch apart on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes until lightly brown on edges.
