NEAPOLITAN COOKIES 
2 1/2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 c. butter
1 1/2 c. sugar
1 egg
1 tsp. vanilla
1/2 tsp. almond extract
5-8 drops red food coloring
1/2 c. walnuts, chopped
1 square (1 oz.) unsweetened chocolate, melted & cooled

Beat together butter and sugar until fluffy. Add eggs and vanilla. Add flour, baking powder and salt. Mix until combined.

Line a 9"x5"x3" loaf pan with waxed paper allowing the ends of the paper to hang over side.

Divide the dough into 3 equal portions. To the first stir in almond extract and food coloring. Pat onto bottom of prepared pan. To the second portion stir in the chopped nuts. Pat evenly over pink mixture. To the remaining third stir in melted chocolate. Pat evenly over nut mixture.

Cover and chill at least 4 hours.

Lift the waxed paper to remove dough from pan. Cut dough in half lengthwise then slice again crosswise in 1/8" to 1/4" slices. Place 1" apart on ungreased cookie sheet. Bake 10 to 12 minutes in 350 degree oven. Makes 6 to 7 dozen.
