CARROT KUGEL 
2 c. all-purpose flour
2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
4 1/2 c. shredded carrots
1 c. oil
4 eggs
1 tsp. salt

Mix flour, sugar, baking powder, baking soda, salt and cinnamon. Add carrots, oil and eggs. Mix until moistened. Beat at medium speed for 2 minutes. Pour into a greased 13x9x2 inch pan (or a springform mold). Bake at 325 degrees for 50-60 minutes. Cool well before removing from pan. Serves 10-12.

Haven't made it yet but needed a recipe that had lots of carrots and this is the only one I found. I will probably add other spices such as nutmeg, mace, and all spice.
