CATFISH GUMBO 
Cooking spray
1 c. chopped celery
1 c. chopped onion
1 c. chopped green pepper
2 cloves garlic, minced
3 (10 1/2 oz.) no salt (or low) chicken broth
2 (14 1/2 oz.) cans undrained chopped tomatoes
1 (6 oz.) V-8 veg. juice
2 bay leaves
1/2 tsp. pepper
1/2 tsp. dried thyme
1/2 tsp. hot sauce
1 1/2 lbs. catfish, cut into 1 1/2 inch pieces
2 (10 oz.) pkgs. frozen okra
4 c. hot cooked rice

Spray soup pot. When heated (hot) add celery, onion, green pepper and garlic and cook until crisp tender. Add broth and next 7 ingredients. Bring to a boil, cover and simmer for 30 minutes. Stir in fish and okra and simmer for 15 minutes. Discard bay leaves. Serve over rice.
