CATFISH WITH HORSERADISH SAUCE | |
1 1/2 lbs catfish fillets 2 egg whites 1 tbsp. grated onion 1/4 tbsp. dry mustard 2 tbsp. butter 1 cup 1% milk 1 tbsp. lemon juice 2 tbsp. sour cream 1 tbsp. minced garlic 1/4 tsp. white pepper 2 tbsp. flour 4 tsp. prepared horseradish sauce Spray a baking sheet with cooking spray. Arrange fish on baking sheet. Sprinkle fish with lemon juice. In bowl, beat egg whites until soft peaks form. Fold in sour cream, onion, garlic, mustard and 1/8 teaspoon pepper. Spoon some of the mix onto each fillet. Bake at 375°F for 20 minutes or until fish flakes easily with a fork. In a saucepan, melt butter, blend in flour until smooth. Stir in milk and horseradish sauce, and remaining pepper. Cook, stirring until bubbly and slightly thickened. Serve sauce with fish. Submitted by: Sherry Monfils |
