CATFISH COURTBOUILLON 
2-3 lbs. catfish
Cooking oil
1 can tomato sauce
1 can water
Onion tops, chopped
Parsley, chopped
Onions, chopped
Flour
Salt & pepper to taste

Put catfish in heavy pot with just enough oil to cover bottom of pot. Add tomato sauce, water, onion tops, parsley and onions. Mix well. Add 1 tablespoon flour and seasonings. Cook until the sauce begins to boil. Reduce to low heat and put lid on. Cook until fish is done. Note: Never stir the mixture. You may shake the pot.
