BLUEBERRY CHEESE CAKE PIE | |
3 tbsp. cornstarch 1/2 c. water 4 1/2 c. blueberries 1/2 c. honey 1 1/2 c. low fat cottage cheese 6 tbsp. apple juice concentrate Prepare baked pie shell Mix cornstarch with water. Place 2 cups of blueberries in a food processor and pour cornstarch mixture over the berries. Puree. Pour pureed mixture into kettle. Add honey. Cook for 7-8 minutes until thick and clear. Add 2 more cups blueberries reserving last 1/2 cup for garnish on top. Pour the fruit mixture into the prepare baked pie shell. Puree cottage cheese and apple juice concentrate until smooth. Spread evenly over pie. Decorate remaining blueberries. Chill the pie for 2 hours. 295 calories per serving. |
