MICROWAVE VEGETABLE CASSEROLE 
4 c. zucchini, sliced
3 or 4 med. carrots, shredded
1/2 c. onion, chopped
4 tbsp. butter
1 1/2 c. seasoned stuffing mix
1 can cream of chicken soup
1/2 c. sour cream
2 tbsp. melted butter
1 c. seasoned stuffing mix

In 2-quart microwave container combine first 4 ingredients. Cover and zap on HIGH for 10 minutes. Stir twice.

Mix stuffing mix with vegetables. combine soup and sour cream; mix well. Stir into vegetables. Combine the 1 cup stuffing mix with melted butter. Sprinkle over dish. Microwave uncovered 12 minutes until bubbly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
