MICROWAVE VEGETABLE CASSEROLE 
1 tbsp. olive or salad oil
1 1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp. salt
3 potatoes, peeled & quartered, about 8 oz. each
1 lg. red or yellow onion, cut into 6 wedges
3 zucchini, about 8 oz. each
1 green pepper, cut into 6 wedges
1 red pepper, cut into 6 wedges
8 oz. mozzarella cheese, shredded (2 c.)

In shallow 3 quart casserole, mix olive oil with next 3 ingredients; add potatoes and onion, turning to coat all sides. Cook, covered on high 12-15 minutes, until potatoes are tender; stir often. Pushing potatoes toward edge of casserole. Cut each zucchini lengthwise in half, cut each half crosswise into 2 pieces. Add zucchini pieces and peppers to casserole with potatoes. Cook, covered, on high 10-13 minutes until tender; stir often. Sprinkle with cheese. Cook on high 1 1/2-2 1/2 minutes until melted. Makes 4 servings.

Special Note: By adding slices of smoked sausage or polska kielbasa, the vegetable casserole becomes a great one dish meal. The meat should be added during the last 3 minutes of cooking. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
