CHICKEN-BROCCOLI CASSEROLE 
4 boneless chicken breasts (skinless and boneless), cut into bite-size pieces
2 pkgs. frozen broccoli, chopped (I use fresh broccoli - one bunch)
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. mayonnaise (not necessary)
1 c. shredded Cheddar cheese
20 Ritz crackers
1/4 c. melted butter

Saute chicken bites until browned. Layer half of chicken in bottom of 2 quart casserole dish. Cook broccoli as directed on package. (I steam my fresh broccoli in the microwave). Layer half of broccoli on top of chicken. Layer rest of chicken and broccoli. Mix next three ingredients and spread on top. Crush crackers, pour melted butter over crackers and spread on top. Bake at 350 degrees for 20 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
