BRAN MUFFINS 
1 1/2 c. sugar
1/2 c. butter
2 eggs, beaten
2 c. buttermilk
1 c. boiling water
1 c. 100% Bran flakes
2 c. Kellogg's All-Bran
2 1/2 c. flour
2 1/2 tsp. baking soda
1 tsp. salt (optional)

Pour boiling water over bran and let stand while mixing other ingredients. Cream eggs, sugar, butter and the buttermilk soaked bran. Mix dry ingredients, add to the mixture and refrigerate in a tight container. Will keep for a week. Put in muffin tins and bake at 400 degrees for 20 to 30 minutes.

You may add raisins, dates or nuts.
