SHRIMP SCAMPI 
2 lbs. lg. shrimp in shell
1/2 c. olive oil
1/4 c. finely chopped shallots or scallions
1 tbsp. crushed garlic
Ground black pepper
Lemon quarters
8 tbsp. butter
1 tsp. lemon juice
1 tsp. salt
4 tbsp. finely chopped parsley

Shell the shrimp leaving the last piece of shell and tail. Devein. Wash under cold water and pat dry.

Preheat broiler to highest temperature. In shallow, flame proof baking dish, melt butter over low heat, do not brown. Stir in olive oil, lemon juice, shallots, garlic, salt and pepper. Add shrimp and turn them until they are covered on both sides. Broil 3" to 4" from heat for 5 minutes. Turn and broil 5 to 10 minutes longer or until lightly browned and firm to touch. Don't over cook. Transfer to heated serving platter, pour sauce from pan over and sprinkle with parsley. Garnish with lemon quarters and serve.
