MUSHROOM - BROCCOLI CHOWDER | |
1 (14 1/2 oz.) can chicken broth 1 pkg. frozen chopped broccoli 1 1/2 c. sliced mushrooms 1/2 c. chopped onion 2 tbsp. butter 2 tbsp. flour 1 1/4 c. milk 1 (8 oz.) can corn In saucepan bring broth and broccoli to boiling. Reduce heat, cover, simmer 5 minutes, set aside. Cook mushrooms and onion in butter. Blend in butter. Blend in flour, 1/2 teaspoon salt and 1/8 teaspoon pepper. Add milk, cook and stir until thickened. Cook and stir 2 minutes more. Add broccoli with broth, corn and heat through. |
