WILD DUCK HOUSEBOAT 
1 lg. duck or several sm. wood ducks
Celery tops, sliced
1 whole onion, peeled, chopped
4 bags crab boil
1/4 c. olive oil
1 whole bell pepper, including core & seeds, chopped

Par boil duck in water seasoned with the above ingredients until duck is tender. Let cool in stock. 1 pkg. wild Rice-a-Roni, cooked according to directions 1 chopped white onion 1 bunch green onions, finely chopped Several stalks celery, finely chopped Whole oranges Uncooked bacon

Mix together the cooked sausage and rice. Saute onions and celery in butter then add to sausage mixture. Stuff duck with this mixture. Lay 2 slices of orange on each duck. Squeeze orange juice over all. Lay 2 strips of bacon over breast of each duck and bake at 350 degrees for 1 1/2 hours. Yield: 4 to 6 servings.
