Let meat stand at room temperature for at least 1 hour. Preheat oven to 375 degrees. Rub meat all over with salt and pepper. Place fat side up on a rack in shallow, uncovered pan. Place meat in oven and bake for 1 hour. Turn off heat. DO NOT OPEN OVEN DOOR ANY TIME until the meat is absolutely stone cold (this will take at least 6 hours).
Forty-five minutes before serving turn on oven to 375 degrees and cook 45 minutes (wait until last guest arrives before turning on oven). Meat will be brown and crisp and pink (not red) all the way through.
