CREAM OF BROCCOLI SOUP 
1 bunch broccoli, stalk & all, chopped
1/4 bell pepper & onion, chopped
1 tsp. olive oil
1 bay leaf
1 tsp. tarragon
1/2 tsp. black pepper
1/4 tsp. sea salt
1 sm. potato, diced
1 1/2 c. water or vegetable stock
1 c. soy milk

In a quart pot, saute onions in oil until soft. Add bell peppers and spices. Saute a minute or two longer. Add water, broccoli and potato. Cook 10 minutes or until potato is soft. Remove bay leaf. Puree soup adding soy milk at this time. Return to stove and cook 10 more minutes. Approximately 1 quart.
