ITALIAN SAUSAGE CASSEROLE 
2 lbs. sausage, Italian
6 potatoes, peeled
4 carrots, pared
3 onions, sliced
Butter
Salt & pepper

Place pared carrots on bottom of large pan. Dot with butter and place in 450 degree oven (covered) for 15 minutes. Add potatoes, cut in half. Add sliced onions. Dot with butter. Return to oven for 15 to 20 minutes (covered). Add sausage (cover), cook for 30 minutes removing cover last 5 to 10 minutes. Excellent one pot dish. Serves 4 to 6 people.
