ANTIPASTO SALAD 
1 cup Artichoke Hearts, Boiled No Salt
1 can Chickpea (garbanzo)
1/4 cup Pimiento
1/4 cup Salami, Beef, Cooked, cubed
1/4 lb. Mozzarella Cheese
1/2 tsp. sea salt
3 cloves garlic, minced
1/2 tsp. freshly ground black pepper
1/4 cup Extra Virgin Olive Oil
2 tbsp. Vinegar, Red Wine
1 tsp. freshly squeezed lemon juice (optional)
1/2 tsp. fresh basil
1/4 tsp. pinch of ground oregano

Marinate artichokes in lemon juice, salt, pepper, oil and garlic.

In a medium bowl, toss all ingredients together until well coated.

This salad can be prepared using fresh artichoke hearts, or marinated frozen or canned hearts.
