ANTIPASTO SALAD 
1 c. barely cooked carrots
1 c. barely cooked cauliflower
1 can pitted black olives
1 can pitted green olives
2 cans button mushrooms
1 green pepper, cut in chunks
1 can artichoke hearts
1 red onion, sliced
Cherry tomatoes OR
Cut up regular tomatoes

Marinate well in: 4 tbsp. vinegar 1/2 pkg. Good Seasons garlic mix Cloves of garlic to taste Salt and pepper to taste

You can add tuna or shrimp to make it a main dish.
