POPPY - SEED DRESSING | |
1 egg 1/4 c. granulated sugar 1 tbsp. Dijon style mustard 2/3 c. red wine vinegar 1/2 tsp. salt 3 tbsp. grated yellow onion, plus any juice from the grating 2 c. corn oil 3 tbsp. poppy seeds 1. Combine egg, sugar, mustard, vinegar, salt and onion in the bowl of a food processor. Process 1 minute. 2. With the motor running, pour in the oil in a slow, steady stream. When the oil is incorporated, shut off motor, taste and correct seasoning. 3. Transfer mixture to a bowl. Stir in poppy seeds and refrigerate, covered, until ready to use. Makes 1 quart. |
