PEPPER STEAK 
1 1/2 lb. sirloin steak, cut in pieces
1/2 tsp. salt
2 med. onions, chopped
1 c. beef broth
1 clove garlic, minced
2 green peppers, cut in strips
3 tbsp. soy sauce
2 tbsp. cornstarch
1/4 c. cold water
2 tomatoes, cut into eighths
3 to 4 c. rice

Grease large skillet with oil. Brown meat thoroughly, season with salt and pepper. Add onion and garlic and cook until tender (onion tender). Stir in broth and soy sauce. Simmer until meat is tender. Add green peppers. Cover and simmer 5 minutes.

Blend cornstarch with water. Stir in gradually into meat mixture. Cook, stirring constantly, until mixture thickens. Add tomatoes, heat through. Serve over rice.
