PERFECT BRITISH DIGESTIVES
(CRISPY COOKIES)
 
After several months of experimenting I finally cloned them. Enjoy!!! Do not double recipe for best results.

1 cup Uncle Sam cereal (I order online in bulk from Walmart)
1 cup whole wheat flour
2/3 cup old-fashioned rolled oats
1 tsp. baking powder
1 tsp. baking soda
1/3 cup brown sugar, packed
1/2 cup (1 stick) unsalted butter, cold and cubed
1/4 tsp. cream of tartar
1/4 tsp. cardamon spice
1/4 tsp. ginger
3 to 4 tbsp. milk or non-fat Greek yogurt

Line a baking tray with non-stick baking paper. Put all of the ingredients except for the milk into a food processor and pulse until the mixture resembles breadcrumbs. Add the milk or yogurt, little by little, and pulse until the dough barely clumps together. You may not need all of the milk. Gather the dough together with your hands but don't handle it too much.

Place the dough between two pieces of non-stick baking/parchment paper and roll it out thinly (about 1/4-inch). Place rolled out dough in refrigerator for at least one hour to firm up. When chilled, using a round cookie cutter, cut out biscuits and place them on the baking tray. Chill again for 10 minutes, or until firm.

Preheat oven to 350°F (180°C). Bake 12 to 15 minutes until just golden brown at the edges. Remove from oven and allow to cool 10 minutes on the tray before transferring to a wire rack.

Variation: For chocolate digestives, wait until the biscuits have cooled completely and then melt the chocolate in a bowl set over a pan of barely simmering water. Either dip the cookies (one flat side) in the chocolate or drizzle it over them. OR sprinkle Oreo cookie crumbs all over the top before placing in oven to bake.
