ZUCCHINI PARMESAN 
1 onion, chopped
1/4 c. butter
4-6 small zucchini
1/2 c. grated Parmesan cheese (or more to taste)
Salt & pepper

Scrub zucchini and cut into 1/4" slices. Saute onion in butter until soft. Add zucchini and cook, tossing lightly for about 5 minutes. Add salt and pepper to taste. Add cheese. Toss lightly. Cover and remove from heat. Let stand for a few minutes to melt the cheese. 4 to 6 servings.
