ZUCCHINI PARMESAN 
1/4 c. grated Parmesan cheese
6 med. zucchini, sliced
1 sm. sliced onion
1 green pepper, sliced
1 stalk celery, sliced
1 tbsp. Italian seasoning
2 tbsp. butter
1/4 tsp. salt
1/4 tsp. pepper
8 oz. can tomato sauce
3 med. tomatoes, sliced
1/4 c. water

Arrange slices of zucchini in 8-inch square glass baking dish. Add onions, pepper and celery. Sprinkle on Italian seasoning, salt and pepper. Pour on tomato sauce. Arrange slices of tomatoes on top. Sprinkle with cheese and dot with butter. Cover tightly and bake at 350 degrees for 45 minutes or until vegetables are tender. Delicious reheated the next day.
