QUICHE 
Prepared or purchased unbaked pie crust
1 lg. onion, finely chopped
2 cloves, finely chopped
1/2 lb. frozen broccoli, finely chopped or 1/2 lb. zucchini, thinly sliced
4 eggs
2 c. grated cheese, any kind
Herbs to taste
Crumbled bacon (optional)

Preheat oven to 350 degrees. Roll out pie crust thinly and place in bottom of two 9 inch pie pans. Brown onion and garlic in non-stick skillet. In bowl, mix vegetables with browned onion and garlic. Beat eggs, and add to mixture. Add grated cheese, herbs and bacon if desired; place in pie crusts. Bake 45 minutes or until knife inserted near center comes out clean.
