ZUCCHINI NUT BREAD | |
3 eggs, beaten 3/4 c. vegetable oil 1/4 tsp. baking powder 2 tsp. cinnamon 1 c. chopped nuts 2 c. grated raw unpeeled zucchini, drained 2 c. sugar 2 c. flour 1 tsp. salt 2 tsp. baking soda 2 tsp. vanilla Mix egg, sugar and oil. Beat; stir in zucchini. Sift the rest of dry ingredients; add to zucchini mixture; mix well. Stir in vanilla. Reserve 1/2 cup flour and mix with nuts. Add to batter. Pour into 8"x4" loaf pans. Bake at 325 degrees for 50 to 60 minutes or until tests done. Cool before serving. |
