ZUCCHINI NUT BREAD 
2 c. grated zucchini
3 eggs
3/4 c. oil
2/3 c. sugar
1/3 c. molasses
2 tsp. vanilla
2 c. all-purpose flour
1/2 c. whole wheat flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 c. raisins
1 c. chopped nuts

Grate and drain zucchini in large bowl. Beat eggs; add oil, sugar, molasses and vanilla. Beat until thick and foamy. Combine flour, cinnamon, salt, soda and baking powder. Stir until just blended. Gently stir in zucchini, raisins and nuts. Divide batter between two greased and floured 5"x9" loaf pans. Bake 1 hour in 350 degree oven or until toothpick comes out clean. Cool in pans 10 minutes. Remove to racks to cool. These freeze well.
